Courgette and Pea Soup

Unsweetened soy milk can be used in all soups to thin them down, making it more filling and ups the protein content.

½ courgette or zucchini
1 cup frozen peas
½ cup unsweetened Silk Soymilk
Spring onions, chopped
Salt and pepper
Small piece ginger (optional)

Cook all together till soft. When cool, blend in mixie and thin down with some more soymilk as required. The ginger adds a little zing to the otherwise naturally sweet taste of the soup. Print Friendly
